Dragon Fruit Delight
Using only a few ingredients, this recipe is super easy to make, resulting in a healthy treat bursting with sweet, tangy flavor. For a fun presentation, scoop out half of an additional dragon fruit and use as a bowl, as shown in the photo above. Measurements are estimates – do whatever tastes best to you.

  1. Peel and cube dragon fruit.
  2. In small bowl combine honey and lemon. Add more honey or lemon to depending on how sweet or tart you like it.
  3. In a small skillet, toast shaved coconut until just brown.
  4. Drizzle honey-lemon mixture over dragon fruit and top with toasted coconut and lemon zest.
