Mock Chicken Salad
Served on sprouted whole grain bread (I love Trader Joe’s brand), or on top of a bed of lettuce, this mixture made with smashed chickpeas is truly delicious and reminiscent of the way I remember chicken-salad tasting – without the grossness.
  1. Mash garbanzo beans in a medium-sized bowl with a fork, or pulse several times in a food processor.
  2. Combine all ingredients and stir until well combined. Tastes best a few hours later as flavors build.
