Good enough for Thanksgiving or weeknight mashies, this creamy gravy is very flavorful and unlike most gravies, surprisingly low in fat. Make sure to use cornstarch or gluten-free flour blend to make this a gluten-free food.
In small saucepan over medium heat, whisk together flour and nutritional yeast, and cook until fragrant. Place in a small bowl and set aside.
In the same saucepan, saute shallot in 1 TBS water until soft. Add garlic, thyme and sage, and cook 1-2 minutes.
To shallot mixture, add remaining ingredients including toasted flour and nutritional yeast. Increase heat to high until boiling, then returning heat to simmer, stirring often with wire whisk, until thick. Add water if too thick.
