Green Chile Queso
This was created to be spread as the “cheese” in my Tofu Scramble and Potato Quesadillas. To use it as more of a sauce, just add more water.
  1. Combine cashews, 1/4 cup green chiles, 3 TBS water, lemon juice, nutritional yeast, salt, garlic and onion powders in blender or food processor until smooth (I like to use a Magic Bullet). Add more water to thin if desired.
  2. Stir in remaining 2 TBS green chiles.
