Green Chile Queso
This was created to be spread as the “cheese” in my Tofu Scramble and Potato Quesadillas. To use it as more of a sauce, just add more water.

raw cashews
soaked 1 hour and drained

cup + 2 TBS
diced green chiles
divided

start with 3

lemon juice

TBS
nutritional yeast
1/4-1/2
tsp
salt
1/2
tsp
garlic powder
1/2
tsp
onion powder
Instructions
Combine cashews, 1/4 cup green chiles, 3 TBS water, lemon juice, nutritional yeast, salt, garlic and onion powders in blender or food processor until smooth (I like to use a Magic Bullet). Add more water to thin if desired.
Stir in remaining 2 TBS green chiles.
