Forget that junky fast food on the drive home, or the processed frozen entree in the freezer. Next time you need a hot, healthy meal NOW, consider this dish containing only a few main ingredients. The combination of sweet potatoes, kale and brown rice make for a fiber-packed, nutrient-rich meal.

  1. Place (or urgently toss, as I did) sweet potatoes, kale, rice and water in a pan. Cover and cook on medium, stirring frequently, 5 or so minutes, until soft and warmed through.
  2. Season with hot sauce, lemon juice, Bragg’s, salt, pepper and anything else you’d like!
