  1. In medium sauce pan combine rinsed quinoa, water, vanilla, cinnamon, nutmeg and salt. Bring to a boil, reduce heat to simmer, cover, and cook 15 minutes. Fluff with fork.
  2. Scoop into bowl and top with applesauce (great way to avoid sweeteners), apples, raisins, more cinnamon and nutmeg, and warm non-dairy milk (I prefer the taste of unsweetened vanilla soy for this dish). YUM!
