Whole Grain Strawberry Scones
These healthy treats are lighter in texture than traditional scones which are very high in fat. Slightly sweet, they would be the perfect accompaniment to a cup of tea or coffee.

organic chopped strawberries

whole wheat pastry flour

Earth Balance
or other vegan butter

applesauce

cup + 1 TBS
non-dairy milk

vanilla

lemon zest
Instructions
Preheat oven to 375.
Combine chia seeds with 1.5 TBS water and let sit.
Combine strawberries with 1 TBS sugar and let sit.
In large bowl whisk together flour, baking powder, baking soda, 2 TBS sugar and salt. Drop in small amounts of Earth Balance, followed by applesauce.
Stir ingredients until little balls begin to form.
In a small bowl whisk together chia seeds/water with non-dairy milk and vanilla.
Add wet ingredients to flour mixture, along with strawberries and zest. Stir until combined.
Drop by approximately 1/4 cup onto parchment covered cookie sheet. Spread the batter out if you prefer a thinner scone. Bake 22-24 minutes.
