If you love waffles but can’t have gluten, and don’t consume animal products or oils, this recipe is for you!! They are delicious and according to my family, you’d never know they were gluten-free – which is a plus since a lot of gluten-free things resemble cardboard!

Instructions
  1. In large bowl, mix dry ingredients.
  2. In a medium sized bowl, combine the wet ingredients.
  3. Add wet ingredients to dry and stir, pressing out lumps with back of spoon. Let sit 10 minutes while waffle iron heats up.
  4. Follow waffle iron directions accordingly and cook your waffles!
Recipe Notes

I make my own flour blend using 1.5 cups brown rice flour, 1.5 cups sorghum flour, 3/4 cups each potato starch and arrowroot, but I’m sure a store-bought variety would work just fine.  I haven’t tried it though so…fingers crossed!  🙂

If you aren’t familiar with buckwheat groats, they are easily found in natural grocery stores such as Sprouts and Whole Foods.  Despite the name ‘buckwheat’ they contain no wheat and are 100% gluten-free.  Raw buckwheat groats are called just that, and toasted groats are called Kasha.  Use raw buckwheat groats here.
