BBQ Black Bean and Sweet Potato Patties [vegan, gluten-free, oil-free]
This recipe came to me while I was working out, as many recipes do (I should be thinking about the workout and not food, I know!). I wanted to throw something together for an easy lunch and this is what I came up with. They are easy to make but taste like they were a lot of work. They’re moist but hold together well. Really yummy. I like serving them with avocado and Sour Un-Cream, or my Toasted Pepita Avocado Sauce as pictured.

These delicious patties come together quickly and can be made a day ahead of time and baked when you are ready; they also freeze well. They are yummy served with or without a bun and fixins. A got-to recipe for us.

Preheat oven to 375 and cover cookie sheet with parchment paper.
In medium bowl mash black beans. Add the rest of the ingredients to bowl and mix until combined. Refrigerate for 30 minutes or more. *See Notes
Shape into patties and cook for about 35 minutes. Yummy served with avocado, Sour Un-Cream or my Toasted Pepita Avocado Sauce (both can be found in Recipes or links above in blog section).
Recipe Notes
If you have the extra time, the extra flavor is worth the effort to saute a small diced red bell pepper, half an onion diced, a diced jalapeño (seeded if you don't want these too spicy), and a clove of minced garlic. Simply saute until soft and add to the mixture before forming into patties. Still delicious without this step, but better with it in my opinion.
The easiest way to make patties is with these round cookie cutters. If you are using one there is no need to refrigerate the patty mixture. If you aren't using one, a colder batter will be easier to form into patties using your hands.
