Avocado Cream Sauce

This sauce, which I adapted from Dreena Burton’s recipe in Let Them Eat Vegan, is great any way you’d use sour cream.  It’s rich, creamy and a little goes a long way.  Use chipotle hot sauce for a smokier flavor.

Servings: about 1 3/4 cups

  1. Combine all ingredients in blender until smooth and creamy, adding enough water to reach desired consistency. No soaking of cashews required if using a VitaMix or other high-speed blender.
