This savory, creamy gravy is delicious on anything from mashed potatoes, to stuffed squash, to tofu scramble. Since it’s so low in fat, it doesn’t have to be a once in a while treat.
Use brown rice flour to make this gluten-free.
Ingredients
- 4 TBS flour
- 2 TBS nutritional yeast
- 1 shallot minced, about 2 TBS
- 1 clove garlic minced
- 1 cup water
- 1/2 cup non-dairy milk
- 1/2 tsp dried tyme
- 1/2 tsp dried sage leaves not powder
- 1 TBS tamari or other low-sodium, gluten-free soy sauce
- 2 TBS white or cooking wine ex., marsala cooking wine
- salt and white pepper to taste

Instructions
- In small saucepan over medium heat, whisk together flour and nutritional yeast, and cook until fragrant. Place in a small bowl and set aside.
- In the same saucepan, saute shallot in 1 TBS water until soft. Add garlic, thyme and sage, and cook 1-2 minutes.
- To shallot mixture, add remaining ingredients including toasted flour and nutritional yeast. Increase heat to high until boiling, then returning heat to simmer, stirring often with wire whisk, until thick. Add water if too thick.
