Ingredients
- 1 cup dry brown lentils rinsed
- 2 cloves garlic minced
- 1 small onion diced
- 2 stalks celery diced
- 2 medium carrots diced
- 2 med-large yukon gold potatoes diced into bite-sized chunks
- 2 tsp no-salt mulit-spice seasoning See Notes.
- 2 TBS tamari or other low-sodium, gluten-free soy sauce
- 6 cups water or vegetable broth more or less, depending on how thick you like your soup

Instructions
- In a stockpot, saute onion and celery until soft, adding small amounts of water as it sticks.
- Add the rest of the ingredients to the pot. Bring to a boil, reduce heat to simmer and cook until veggies and lentils are soft, 30-40 minutes.
Recipe Notes
Example: Trader Joe’s 21 Seasoning Salute. If you don't have a seasoning blend on hand, be creative and wing it! A combination of any of the following would be great: thyme, sage, rosemary, mustard seed, parsley, marjoram, basil, cayenne, bay leaf, oregano, celery seed, etc.
