This sauce, which I adapted from Dreena Burton’s recipe in Let Them Eat Vegan, is great any way you’d use sour cream.  It’s rich, creamy and a little goes a long way.  Use chipotle hot sauce for a smokier flavor.
        Ingredients    
                - 1 cup avocado mashed
 - 1/3 cup cashews soaked 1 hour
 - 3 TBS lime juice
 - 2 tsp tamari or other low-sodium soy sauce
 - 1-2 tsp hot sauce
 - sea salt to taste
 - 1/2-1 cup water
 
        
    Servings: about 1 3/4 cups

        Instructions    
                - Combine all ingredients in blender until smooth and creamy, adding enough water to reach desired consistency. No soaking of cashews required if using a VitaMix or other high-speed blender.
