I’ve attempted to create granola-type bars in the past and haven’t been happy with the results. I got lucky this time. These are super easy to make and very quick. They are packed with Omega-3’s, protein and fiber.
Note: this recipe is only gluten-free if you use certified gluten-free oats and oat flour, which are both easy to come by.
Ingredients
- 3/4 cup rolled oats
- 1/2 cup oat flour grind oats in blender if you don't have flour
- 3 TBS mini non-dairy chocolate chips
- 2 TBS currants or raisins
- 2 TBS chia seeds
- 1 TBS whole flax seeds
- 1 TBS sunflower seeds
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1 cup very ripe banana, mashed about 2 large bananas
- 2 TBS almond butter any kind of nut butter would work
- 2 TBS minimally processed sugar e.g., turbinado
- 1 tsp vanilla

Instructions
- Preheat oven to 350.
- In medium bowl combine oats, oat flour, chocolate chips, currants or raisins, chia seeds, flax seeds, sunflower seeds, cinnamon, nutmeg and salt.
- In a small bowl combine mashed banana, almond butter, sugar and vanilla. Add to dry ingredients and mix well.
- Spread out in a thin layer on oiled cookie sheet or 9x12 baking dish.
- Bake 22-24 minutes, until edges begin to brown. Cool completely before cutting into 12 bars.
